Friday Night Dinner ft. Recipe for Vanilla Cake

As some of you might know I love trying out new recipes, and on Friday I decided to put together a couple of different recipes that I have been wanting to try out for a Friday night dinner – and it was a success!

It is the first time I have made chicken inside a foil packet, and I will definitely do that again! The chicken was juicy, and the vegetables and lemon slices created a delicious sauce. Now, mashed potatoes are maybe just mashed potatoes, but I agree with the title of the recipe “Perfect Mashed Potatoes”! I did some research before I decided which mashed potatoes recipe I was going to follow, but I am happy I chose this one – even my family told me that it was the best mashed potatoes they had ever tasted!

The roasted brussels sprouts are a new favorite in my house. The first time I tasted them I was a little unsure what I thought about them, but they just became better and better with every taste. As you can see in the pictures I made a lot of brussels sprouts, and it was all gone by the end of the night.

What I made:
🍴 Lemon Garlic Chicken
🍴 Roasted Garlic Parmesan Brussels Sprouts
🍴 Perfect Mashed Potatoes

🍴 Vanilla Cake (from an old Norwegian cooking book I have, recipe below!)

Recipe for Vanilla Cake

Ingredients:
5 dl vanilla sauce/vanilla custard (store bought)
100 g melted butter, cool slightly
1 ts vanilla sugar
3 ts baking powder
350 g all purpose flour
200 g sugar
cinnamon
sugar

Instructions:
🍰 Preheat oven to 170 °C / 325 °F
🍰 Mix the dry ingredients. Add the melted butter and vanilla custard to the dry ingredients. Mix well.
🍰 Pour the batter into a well-greased rectangular baking pan
🍰 Sprinkle with cinnamon and sugar
🍰 Bake for 40 minutes
